Taco Soup

All of the taste and half of the work. This easy taco soup is a perfect stove top meal. With very little carbs it is a healthy alternative to your traditional taco.

  • Total Time: 30 Min.


  • 1 lb ground meat beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 small zucchini, diced
  • 2 cups frozen corn or 15 oz can
  • 28 oz can diced tomatoes
  • 15 oz can of beans
  • 2 cups water
  • 3 Tbsp Taco seasoning
  • 3 Tbsp Ranch seasoning
  •  Salt and pepper


In a large pot brown your ground beef over medium high heat. Once browned add the remaining ingredients and simmer for 30 minutes. Add seasoning like chili or cayenne powder, salt or paper to taste.


Top this with a scoop of plain Greek yogurt, shredded cheese, tortilla chips, avocado, and lime and your ready to enjoy.
