This perfect light lunch can be made in as little as 20 minutes. This dish has the sweetness of the strawberries and that tart flavor of the vinegar.
Heat a large skillet over medium heat. Add olive oil and garlic. Allow this to cook and soften for 2 minutes. Prepare your chicken by slightly pounding it till it’s 1 inch thick. Add salt and pepper to both sides and brown for 3-5 minutes on each side.
While the chicken is browning mix together strawberries, bails, balsamic and 1 tbsp. olive oil. Place this mixture on top of each of the chicken breaks. Apply a small amount of additional balsamic to top off.
