Salt and Vinegar Zucchini Chips

Another alternative to the standard potato chip, these zucchini chips have only 2.9 grams of carbs per serving. Great for a movie night or just a snack while watching TV.

INGREDIENTS

  • 4 cups thinly sliced zucchini
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons coarse sea salt

Directions

Slice the zucchini as thin as possible.

In a small bowl whisk together the olive oil and the vinegar. Place the sliced zucchini in a large bowl ad toss them with the vinegar and oil mixture. Place the slices on the dehydrator racks and then sprinkle with a course sea salt. Allow the chips to totally dry in the dehydrator, this can take up to 14 hours depending on the thickness of the chips.
