Within the first week of going keto, I instantly began to miss sushi. Right away I wanted to stop the diet, but then I found this recipe and started to realize the benefits of the diet.
Cut up 1/5 head of cauliflower into florets and pulse in a food processor until it has the consistency of rice.
In a skillet heat the coconut oil over medium-high heat. Add the cauliflower rice to the pan and cook for 5-7 minutes until it gains a slightly brown color. Place this in a bowl and set aside. Slice avocado, cream cheese, and cucumber into thin slices also setting this off to the side.
Lay out clear plastic wrap on the table so that it is slightly longer than the nori wrap. Lay the nori wrapper on the plastic wrap and evenly spread the cauliflower rice over top, being sure to leave gaps around the edge.
Stack the slices of cucumber avocado and cream cheese on top of one and other. Lift one end of the plastic and roll the sushi being sure to not wrap the plastic wrap into the log. Another great tip is as you roll the log wrap the edges down as well to ensure that you do not loose any ingredients.
Starting in the middle cut into 8 chunks using a very sharp knife. Serve and enjoy.
