Greek Lemon Chicken Skewers With Tzatziki Sauce

Grilling these chicken skewers will bring out the flavor from the lemon, garlic, and parsley. This easy recipe will work as a quick meal for lunch or dinner.

  • Servings: 6
  • Total Time: 1 hr. 20 min.

  • 1 1/2 pounds chicken breast, cut into approximately 1-inch cubes
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 2 cloves of garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon coriander
  • 3/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

  • 1 cup peeled and diced English cucumber, about 1/2 of a cucumber
  • 1 1/2 cups plain non-fat Greek yogurt
  • Juice of half a lemon
  • 1 heaping tablespoon chopped fresh dill
  • 1/2-1 teaspoon grated garlic
  • 1/2 teaspoon kosher salt
  • Black pepper to taste

Peel and dice cucumbers. In a mixing bowl combine the remaining ingredients and whisk them together. Fold the cucumbers into the sauce and place in the refrigerator.

In a large bowl combine all of the ingredients for the chicken. Let this sit in the fridge for up to 3 hours but no less than 45 minutes. While this is chilling turn a grill temperature up to medium high heat. Thread the chicken onto skewers. If you are using wooden skewer soak them for 30 minutes prior to cooking.

Place the oil on the grates of the grill then lay your skewers across. Grill them for 3-4 minutes on one side then flip and cook for an additional 3-4 minutes.
